192pp., 8vo. In contemporary black calf binding, with brass clasp and marbled endpapers. Ownership inscription on fly leaf: 'Claude Clark | Jan. 1875'. The first entry reads: 'System of Brewing according to commenced in Brewery Tuesday Nov 2nd 1875. The charge for instruction was 50 guineas, which was repaid in profits in almost 5 weeks, it was found to act admirably and produced 4 1/2 brls per qr and 5 brls from good malt.' This is followed by a long 'Mashing example'. There follow recipes for 'Dressing', 'Stout', 'India Pale ale', 'XXX Stock ales' and 'Running XXX Ales'. Numerous other recipes follow, including 'For making Saccharum', 'Inferior palate ale' and 'For brewery weak ales'. Also entries on 'Copper lengths', 'Examining yeast', 'Directions from Herring, Giles & Co with finings machine', 'Sugar Inversion', 'Gauging brewing vessels', 'To make Caramel', 'Washing yeast as practiced at Blatch's Brewery, Theale', 'Practical Malting', 'Steeping', 'Floors', 'Drying Malt', 'Hops', 'Sparging', 'Grinding & Mashing', 'Mashing Heat', 'Fermentation', 'Pitching Heats', 'Cleansing', 'Racking', 'Hop Substitutes'. A page at the rear of the volume lists the price of hops at various locations between 1869 to 1875, with the first entry reading 'Lenham East Kent 1874 £12 10s 0d' and the last 'Coles Golding Kent 1875 £7 15s 0d'. A couple of articles are transcribed from the Brewer's Journal. Laid down in the volume is a photographic print, with printed caption: 'Microscopic field of yeast | Photographed from nature, by A. Boake and Co., 7th March, 1884.' Also laid down are two printed newspaper cuttings, the first from the Bedford Times, 24 March 1883, on 'Bedford Water'; and the second (and last item in the volume) from the Bedfordshire Standard, 22 April 1898, on 'The water supply of Bedford'. Loosely inserted are two printed 12mo forms headed 'Gyle No.', with manuscript calculations on the reverse. By 1897 Clark was managing director of Newland and Nash, which had been formed by the merger in 1893 of the firms Newland and Co. and Messrs G. P. Nash and Son (see Times advertisement, 29 May 1897). Four years previously his address is given (Times, 2 June 1893) as 21 Goldington Road, Bedford.
